Word Origin Gripping comes from Old English gripan 'to grasp, seize' — so a gripping story is one that seizes your attention and won't let go. The same root gives us grip, handgrip, and even gripe (a complaint that clutches at you). The PIE root *ghreib- meant 'to grip' and you can feel the tight hold in the word.
