They consist of densely packed cells that handle much of the organ’s processing work. In the brain, the cerebral cortices include the gray‑matter sheets we associate with thought and perception. Neuroscientists use the word to denote the cerebral cortices, each split into lobes that handle vision, language or movement. Anatomists also speak of a renal cortex or an adrenal cortex, the latter making hormones such as cortisol. Use the plural when you refer to several outer layers at once, for example the cortices of different species or the brain’s left and right halves.
